deceptively simple creations — mixing and melding French and Italian techniques and materials with Japanese classics
and a variety of Asian spices.
The selection at Irashai Grill is alluring and inventive, with each offering being a unique combination of
kitchen dynamic — a collaborative union between Mok, who has practiced East/West fusion cuisine in some of Hong Kong's finest
establishments, and Ikoma, a French/Italian-trained Chef who has spent thirty years crafting fine Japanese fare. While
indiscriminate use of world flavours is often attempted with mixed results, Ikoma and Mok take a deeply involved approach
to their work that requires a meticulous testing period. The Irashai result? Each dish perfectly engineered for a seamless
